How to make Low Carb Cauliflower Rice Sushi

How to Make Low Carb Cauliflower Rice Sushi

Sushi doesn’t have to be carb fest dish.  Making a low carb cauliflower rice sushi roll is very easy.

Ingredients to make caulirice:

  •  Cauliflower
  • Cream Cheese

Start by cutting the cauliflower and pulse them into food processor until they resembles grains of rice. Microwave for about 4-5 minutes.

Add cream cheese to the cauliflower. This will make it a bit sticky and resemble sushi rice. Put into the fridge to cool.

While your caulirice is cooling you can prep your other sushi ingredients.

Filling Ideas:

  • Crab or imitation crab
  • Avocado, thinly sliced
  • Salmon, sliced (buy sushi grade from a grocery store like AJs Fine Foods or Whole Foods)
  • Tofu, sliced
  • Nori Sheets, for wrapping the sushi roll
  • Cucumber, thinly sliced
  • Carrot, julienned 

Sauces and Toppings:

  • Pickled Ginger, on the side
  • Chili Mayo, on the side, on top, or inside the roll
  • Eel sauce, on the side, on top, or inside the roll
  • Soy Sauce, on the side
  • Wasabi, on the side
  • Sesame Seeds, for topping

Wrap your bamboo mat with saran wrap, then spread a layer of the caulirice with a rice paddle or spatula. Next, a nori sheet. Place any of your other ingredients of your choosing on the half of the nori closest to you. Then, tuck and roll. When you have almost reached the end of the nori when rolling, lightly brush the end of the nori with water to seal the roll.

Here’s an extra flavoring tip:  run a line of wasabi, Japanese Mayo, or a Chili Mayo along the center of the rice for added ZING!

Take the roll (still inside the saran warp) and transfer to a cutting board. Remove the saran wrap then use a sharp knife and slice into about 6 pieces.

Transfer to a plate and be creative with your presentation. Top with eel sauce, chili mayo, sesame seeds. Add a side of pickled ginger and a drop of wasabi.

Or, top with mini cooked shrimp in Sriracha sauce. Yum!

These are best eaten the day they are made, but can be stored overnight in the fridge in an airtight container.  We had our leftovers for lunch the next day and they tasted great, though the nori sheets had softened overnight.
